Meet one of our newest suppliers, Unpeeled Kombucha, made in St. Paul, Minnesota. Kombucha is a phenomenon—a naturally cultured probiotic drink made from raw ingredients. According to the Weston Price Institute (experts on traditional foods):

Having worked as an engineer on NASA’s wastewater reclamation systems for a hot 4+ years in Houston, I provided support and testing of a system that purified recycled human wastewater for drinking water. The intended use was for shuttle and extended missions in space. A recycled “closed” system for space missions was our focus. A biological (microorganism) bioreactor was used to remove certain components in the drinking water for astronauts. It’s rocket science!!
Years later while I was working as a chiropractor in my Cathedral Hill Health Clinic, I was seeking an alternative from sugared/caffeinated beverages to provide to my patients. I started researching functional beverages, something that could supply the body with a healthful purpose rather than unhealthy beverages. My career turned full circle. Using my NASA experience while working at the Johnson Space Center, I used microorganisms to remove products from water—why couldn’t we use beneficial microorganisms to add nutrition to beverages. I studied probiotics and designed fermentation processes that would promote healthful nutrients. My idea worked!! Two years of development and testing resulted in the creation of Unpeeled.
