Wondering if you can research for me whether there are available substitutes for cheese and yogurt that do NOT contain casein, gluten or soy? Thank you.
There are no cheese substitutes we know of that do not include either gluten, casein, or soy. We have a casein-free cheeze, but it’s soy cheeze, and the non-soy cheezes both have casein. Lucy, one of our deli workers, reminded me that local pizzeria Pizza Luce offers a cashew-based cheese alternative they call “rinotta.” As the name suggests, it’s soft like a ricotta cheese. I believe they make it themselves, and I’m not sure whether it contains casein, but you could call one of their locations and inquire.
